In large food processing plants, unpeeled garlic is stored in cold rooms, where maintaining appropriate temperature and humidity effectively preserves its freshness and flavor. During processing, however, the garlic must first be thawed—and wet garlic is difficult to peel and inconvenient to process. Hot-air drying equipment is therefore typically deployed to dry the garlic before conveying it to peeling equipment. This supports a continuous, high-efficiency production model and improves both production efficiency and processing quality.

To strengthen real-time monitoring and production management of drying equipment and build a smart food processing plant, WideIOT industrial smart gateways connect to controller PLCs to collect real-time equipment operating status and process parameters.
